The degradation degree of CS under acidic, alkaline and neutral conditions is expressed by the uv absorbance value at 232nm. The higher the UV absorbance value is, the greater the degradation degree is, thus reflecting the stability of CS under different conditions.
Physical properties
CS is an acidic viscous polysaccharide extracted from animal tissue and is white or white powder. Odourless; It is hygroscopic. The aqueous solution of this product is viscous and does not condense when heated. The product is soluble in water, insoluble in ethanol, acetone, ether and other organic solvents, the salt is more stable to heat, heat up to 80℃ will not be destroyed. Chondroitin sulfate aqueous solution, in high temperature or acid is unstable, mainly deacetylated or degraded into monosaccharides or smaller molecular weight polysaccharide.
